I won't give a recipe for spaghetti sauce here, because everybody has their own favorite for that. Have you ever thought, "wouldn't it be nice to have the taste of my homemade spaghetti sauce, with the convenience of a canned spaghetti sauce?" Well then, here are the canning instructions.
OK, I admit that canning spaghetti sauce isn't as convenient as picking up a jar at the store, but make a big batch once, and you can enjoy convenience for several meals. You can even include the mushrooms or ground meat if you want.
To can spaghetti sauce, leave 1 inch headspace and process using the pressure canner method. If it does not have meat, then process pints for 20 minutes or quarts for 25 minutes. If you want to include browned crumbled sausage or hamburger, then process pints for 60 minutes or quarts for 70 minutes.
If by chance you don't have a favorite spaghetti sauce recipe, then something like the Mrs. Wages mixes makes it easy to turn your gardens tomatoes into home canned convienience.

I have never canned green tomatoes, but I have been made curious by recipes for pickled green tomatoes, and even a recipe for green tomato jam. I keep thinking that some day I will try one of these recipes.

Do you have a special cucumber relish or pickle recipe that you or your Mom used? Any other canning suggestions on what to do with cucumbers other than pickles? We love them, but my goodness!

My favorite thing to do wit cucumbers is make bread and butter pickles, so I will post on this next time.
ReplyDeleteI had such an overload of green tomatoes at the end of the season last year, that I sliced them and canned them in plain water with a tsp of salt and a tbsp of lemon juice per qt. When the urge for fried green tomaotes struck in the dead of winter, I drained them, patted lightly between paper towels, then coated and fried the same as if they were fresh from the vine. Definitely a family favorite!
ReplyDeleteDo the same guidelines apply if I'm using chicken instead of hamburger? Most of the time I freeze my sauce, but this would be nice, too, since I often run out of freezer space.
